Valerie's Salad
For the Salad:
Bokchoy - 1
Medium Broccoli - 1
Shreded red cabbage - 3/4th cup
Roasted Lavender Chicken (Check the recipe below)
Tossed with the dressing. Dressing ingredients are listed below as well.

For Dressing:
Shallot - 2 tbsp (browned)
Flax oil - 2 tbsp
Juice of half a lemon
White balsalmic vinegar - 2 tsp
Whisk together the ingredients listed above.

For Roasted Lavendar Chicken:
I get my chicken at Trader Joe's. Organic chicken for $2.69 a pound is a good deal. Take off the from the chicken. Marinade the chicken in olive oil, white balsamic, shallots, lemon juice, rosemary and lavendar. Yes lavendar! Roast as desired.

Veggie Taco with Baked Sweet Potato Fries

Veggie Taco:
Red Cabbage
Green Onions
Red and Green bell peppers
Guacamole
Cream Cheese
Grass-fed Ground Beef (optional)

Baked Sweet Potato Fries:
Sliced Sweet Potato
Coconut oil
Salt to taste
Parmesan Cheese
Bake at 450F for 15 minutes. Then flip and bake for another 12 minutes.

Paleo Meat Loaf

Ingredients:
  • 2 lb ground beef;
  • 1 ½ tsps Himalayan salt;
  • Cayenne pepper to taste;
  • 1 egg;
  • 1 medium onion, finely chopped;
  • 2 cups white button mushrooms, finely chopped;
  • 1 tsp chili pepper flakes;
  • 3 tsp fresh thyme, minced;
  • 1 tsp fresh oregano, minced;
  • 3 cloves garlic, minced;
  • ½ cup homemade ketchup;
  • 1 tbsp raw honey (optional);
  • ½ tsp balsamic Vinegar;
  • 1 tsp paleo cooking fat or coconut oil

Preparation:

  • Preheat your oven to 350ºF/180ºC.
  • In a medium sized skillet placed over a medium heat, melt the cooking fat or coconut oil, add the mushrooms and saute for 2 to 3 minutes, or until soft.
  • In a large bowl, combine the meat, Himalayan salt, cayenne pepper, egg, onion, mushrooms, chili pepper, thyme, oregano and garlic. Mix well, making sure to break-up the meat. Add the cooked mushrooms as well. It’s very important that the mushrooms are evenly distributed to ensure the loaf bonds well.
  • Lightly grease loaf pan and fill it with the meat mixture. Place in the oven and cook for approximately 15 minutes.
  • Meanwhile, in a small bowl, combine ketchup, honey and balsamic vinegar to make the sauce for the top of the meatloaf.
  • After cooking for 15 minutes, gently spread the sauce on the top of the loaf.
  • Continue cooking for another 40 minutes.

Flank Steak with Chimichurri Sauce

Chimichurri is an Argentinian condiment for meat. It's a thick vinaigrette rounded out with herbs, garlic and hot chillies. Lean yet rich in flavour, flank and rump steak supplies even more of vitamins B12 and B6 than other lean beef cuts. Most people think of bananas when they think of potassium sources, but beef is a very good source of this mineral which helps maintain the body's fluid balance. A 100 gram portion of rump steak supplies more potassium than a large banana.

Ingredients:
3,4 ml himalayan salt
2,5 ml each ground coriander, cumin and dried oreganum
1 well-trimmed thick flank steak (about 450 g)
2 garlic cloves, peeled
250 ml packed coriander leaves
125 ml packed parsley leaves
1 green chilli, seeded and finely chopped
70 ml chicken stock
30 ml red wine vinegar
10 ml olive oil

Preparation:

  • In a small bowl, combine 1,25 ml of the himalayan salt, coriander, cumin and oreganum. Rub into both sides of the flank steak; set aside.
  • To make the sauce: in a small pot of boiling water, cook the garlic for 2 minutes to blanch. Transfer to a food processor and add the fresh coriander, parsley, chilli, stock, oil and the remaining salt. Process until smooth.
  • Preheat the grill. Grill the steak 15 centimetres from the heat for 4 minutes per side for medium-rare. Let stand for 10 minutes, then slice thinly across the grain. Serve with the chimichurri sauce spooned on top.

Grilled Chicken with Parsley Sauce

Ingredients:
4 skinless, boned chicken breasts
2,5 ml each himalayan salt and ground coriander
paprika and cumin seeds to taste (optional)
stevia, xylitol or sweetener of your choice to taste
250 ml flat leaf parsley
60 ml chicken stockl
15 ml lemon juice
10 ml olive oil

Preparation:
Preheat the grill to medium. Rub the chicken with 1,25 ml of the himalayan salt, all the other spices and stevia. Grill the chicken 20 centimetres from the heat for 6 - 8 minutes per side, until cooked through. Meanwhile, in a food processor, purée the parsley, stock, lemon juice, oil and the remaining salt. Spoon the sauce over the chicken.

Serves 4. Enjoy! ♥

Turnip Greens with Crispy Chicken

Turnip Greens are rich in Calcium, Vitamins C, E, K and Omega-3 fatty acids. Because of the presence of Vitamin K and Omega-3, these greens have anti-inflammatory properties. These greens are also rich in glucosinolates with anti-cancerous properties. Steaming is the best way to retain maximum nutrition and health benefits.

Ingredients:
Turnip Greens - 1 big bunch (chopped)
Vegetable/Chicken Stock - 1/4th cup (I used the water from soaking dried porcini)
Chicken Breast - 1 (marinaded in enough salt, pepper and herbs of your choice)
Crushed Garlic Cloves - 5
Cayenne Pepper per your taste
Himalayan Salt to taste

Preparation:

  • Cook turnip greens in stock, salt and pepper for about 10-15 minutes. Garnish with crushed garlic and set aside.
  • Sprinkle salt and pepper to chicken breast on both sides and marinade in any herbs of your choice for 1/2 hour. Grill or broil the chicken breast and slice it into desired size and shape. I browned the chicken breast in ultravection oven.
  • Serve turnip greens with chicken breast. Enjoy!

Brown Basmati Rice with Chicken and Vegetables

Ingredients:
Brown Basmati Rice - 1 cup
Water - 2 cups

For Chicken Marinade
Small Chicken Breast - 1 (cut into mini cubes)
Fresh Ginger and Garlic Paste - 1 tsp
Diced Onion - 2 tbsp
Diced Tomato - 2 tbsp
Balsamic Vinegar - 1 tbsp
Cayenne Pepper - a few pinches
Juice of one whole lemon
Himalayan Salt to taste

Vegetables:
Finely Chopped Kale, Collard and Spinach Stems - 1 cup (nothing goes wasted from these rich greens!)
Chopped Spring Onions - 1/4th cup
Diced Carrots - 1/4th cup
Diced Celery Sticks - 1/4th cup
Minced Garlic - 1 tsp
Cilantro Sprigs - a few (diced finely)
Gluten Free Soy Sauce (optional)

Preparation:

  • Cook Brown Basmati Rice per package instructions, fluff and set aside.
  • In a steel skillet, cook chicken breast on medium heat until well cooked. It takes anywhere from 15-20 minutes. Just when the chicken is almost cooked add kale, collard and spinach stems. Allow these to cook for a 3-4 minutes. Turn off the heat.
  • Preheat oven to 300F. Add rice and the rest of the diced vegetables into the cooked chicken. Sprinkle more salt and pepper if you like. Add gluten free soy sauce if you are using and toss well. Then, transfer the contents into a pyrex glass baking dish with lid and let this bake for 10 minutes.
  • Serve this by sprinkling more lime juice on top with any homemade pesto. Here's the recipe for Cilantro-Almond Pesto.

Easy-Breezy Chicken/Turkey Pilaf

Ingredients:
Chicken/Turkey Breast - 1 pound (cut into equal cubes)
Large Onion - 1 (finely chopped)
Tomatoes - 3 (finely chopped)
Brown or White Rice - 1 cup (soaked for 1/2 hour)
Bay Leaves - 2
Green Chillies - 2 (slit length-wise)
Olive oil - 1 tsp
Cilantro Sprigs - a few (finely chopped)

For Marination:
Fresh Ginger and Garlic Paste - 1 tsp
Red Chilli Powder - 1/4th tsp
Clove and Cinnamon Powder - 1 pinch each
Cumin and Coriander Powder - 1/8th tsp each
Juice of one whole lemon
Himalayan Salt to taste

Preparation:

  1. Marinate chicken/turkey breast cubes for at least two hours by mixing up the ingredients listed under "For Marination".
  2. Warm up oil in a steel skillet and sweat the onions. Then, add the marinaded chicken/turkey pieces and tomatoes in that order. Stir and cover cook for 15 minutes stirring once in between. Turn off the heat and let the chicken/turkey stay in the skillet for about five minutes. Separate the chicken/turkey breast pieces from the gravy and set the pieces aside.
  3. Measure the yielded gravy. If it is less than two cups, add water to make up to two cups. Bring this to a boil along with bay leaves and green chillies. Then add the soaked cup of rice and let the rice cook until done. Fluff the rice, turn off the heat. Allow it to set for another 5-10 minutes.
  4. Now, add up the chicken/turkey pieces separated in Step 2 and stir once. Garnish with cilantro and serve with any gravy or sauce. 
  5. In the picture, I served "Easy-Breezy Chicken/Turkey Pilaf" with chicken cooked in tomato purée, salt and a few spices.

Oil-Free Chicken/Turkey Kebabs

For this recipe we are avoiding heating oil predominantly because we are broiling it at a very high temperature. Every type of oil has a SMOKE POINT. At this point, the molecular structure of the oil starts changing. These molecular changes result in nutritional degradation changing a healthy oil rich in Omega-3's to ridiculously unhealthy. Please keep this in mind when heating your oils.

Note: Olive Oil can be used for low to moderate heats and not for higher heats

Ingredients:
Chicken/Turkey Breast cut into equal cubes
Peppers all colors - cut into desired size
Broccoli stems - cut into desired size
Onions - cut into desired size
Tomatoes - cut similar to onions
Mushrooms or veggies of your choice

For Marinade
Juice of 1-2 whole lemons
Balsamic Vinegar - 1 tbsp ( don't use if you are going fully alkaline)
Cayenne Pepper - a few big pinches
Cumin Powder - 1/2 tsp
Clove and cinnamon powder - a couple pinches
Himalayan Salt to taste

Preparation:
Mix all the ingredients listed for marinade. Liberally apply to the chicken breast pieces and marinate for at least a couple hours. Also apply some for the vegetables (no need to marinate the veggies). Preheat the oven at its highest temperature or better broil. Soak your skewers for 1/2 hour in water. Thread skewers as you desire with chicken/turkey breast bits and vegetables. Broil anywhere from 20-25 minutes turning once in the middle. Serve with a green salad by squeezing some more lemon juice onto the kebabs. In the picture, I served the kebabs with spinach-kale-black grape salad. Enjoy!

Alternately, you could use salmon or tilapia or any fish also!

Chicken Breast Patties

Ingredients:
Ground Chicken Breast - 1 Pound
Onion - 1 (Diced)
Diced Carrots - 1/2 cup
Diced Scallions - 1/4th cup
Organic Egg - 1 (or two egg whites)
Cumin Powder - 1/4th tsp
Cayenne Pepper or Red Chilli Powder - per your taste
Chopped Cilantro Leaves - 2 tbsp
Himalayan Salt to taste
Almond Meal - 1 tbsp (optional - I don't use it)
Olive Oil - a tsp for greasing the baking tray


Preparation:

Preheat the oven to 350F; grease the baking tray with a tsp of oil. Mix all the ingredients except oil. Take a handful of this mixture and make it into a patty and put it on the greased baking tray. Repeat the process until you run out of the patty mixture. Bake it at 350F for 15 minutes. Then, pull out the tray and turn the patties and set the oven to broil and broil on one side for 2 minutes. Turn the patties again and broil on the other side for another 2 minutes. They should be well done by this time. Serve them with lettuce, tomatoes and tomato sauce on gluten-free bread slices or just enjoy them straight with organic tomato ketchup. Makes about 10 patties. Enjoy!

Ginger Chicken with Spinach and Peppers

Ingredients:
Chicken Breast or Boneless and Skinless chicken - 1.5 pounds
Ginger Chicken
Crushed Ginger - 2 tbsp
Turmeric - 1/4th tsp
Juice of one lemon
Red Chilli Powder - 1/8th tsp
Black Pepper Powder - 1/8th tsp
Cumin Powder - 1/4th tsp
Large Onion - 1 (Coarsely chopped)
Julienned Peppers - 1 cup
Chopped Spinach - 2 cups
Chicken Stock - 1/4th cup
Himalayan Salt to taste

Method:
Clean chicken and marinate it for one hour in ginger, turmeric, chilli powder, pepper powder, cumin, salt and lemon juice. Heat up a pan and add the chicken stock. When the chicken stock is boiling add the marinated chicken and mix well. Let the chicken boil in its own juices for about 15 minutes on medium heat. Stir every five minutes. Add the onions and peppers and let these cook for another 5 minutes or so. Then, add the spinach and peppers; stir for a minute. The chicken should be well cooked by this time. Serve it along with any salad!

Serves: 4 or more

Variation: You could do the same with garlic for variation.

Chicken Kadai

Chicken Kadai is a famous way of cooking chicken in India. You will find this recipe in most Indian restaurants. It is easy to make but very savoring. Traditionally, skinless chicken with bones is used for this recipe. Alternately, you could use chicken breast!

Ingredients:
Chicken - 1.5 pounds
Onion - 1 diced fine or you could throw the onion in a food processor just so it is not too smooth
Tomatoes - 3 or 4 diced very fine (I love tomatoes and so I use 4)
Crushed Ginger and Garlic - 1 tbsp
Curry Leaves - 10
Green Chillies - 3 (cut lengthwise)
Red Chilli Powder - 1/4th tsp
Black Pepper Powder - a few pinches
Coriander Powder - 1tsp
Cumin Powder - 1tsp
Ground Cinnamon and Cloves - 3 pinches
Turmeric - 1/4th tsp
Juice of 1/2 lemon
Mustard seeds - 1/2 tsp
Cilantro - chopped fine
Himalayan Salt to taste
Extra Virgin Olive oil - 2 tbsp

Preparation:
Wash the chicken thoroughly and squeeze out any water. Marinate chicken for an hour in salt, black pepper, red chilli powder, turmeric, cumin, coriander, cinnamon and cloves powders with a tbsp of oil and lemon juice. Set this aside.

Heat up the leftover oil in a large wok and allow the mustard seeds to splutter. Then add the curry leaves and let them fry for about 10-20 seconds. Next, add green chillies, ginger and garlic paste and stir for 30 seconds and then add the diced onion and stir for a minute. At this time chicken can be added. Mix well and close the lid for about 10-15 minutes. Then, add in the tomato puree and let the chicken cook with the tomato puree for another 10 minutes or so. By this time, your chicken should be done well. You can garnish with chopped cilantro leaves if you like or just enjoy it right away with a cup of warm brown rice cooked with herbs.

Serves: 5 or 6

Stir Fried Steak with Vegetables

RUMP STEAK: Lean yet rich in flavour, rump steak supplies even more of vitamins B12 an B6 than other lean beef cuts. Most people think of bananas when they think of potassium sources, but beef is a very good source of this mineral which helps maintain the body's fluid balance. Potassium is crucial to the regulation of muscle concentration and nerve impulses. Therefore a must for MS'ers!

Ingredients:
15 ml Carotino or Avocado oil
15 ml red wine
15 ml + 5 ml cornflour
0,6 ml bicarbonate of soda
350 g well-trimmed rump steak, cut to stir fry
125 ml chicken stock
15 ml balsamic vinegar
5 ml xylitol or sugar of your choice
15 ml vegetable oil
15 ml finely chopped fresh ginger
3 cloves garlic, finely chopped
1 large red pepper, cut into 5 x 1-cm strips
225 g asparagus, trimmed and cut into 5-cm lengths
160 g shredded Chinese cabbage of veggies of your choice
4 spring onions, thinly sliced

Preparation:
In a medium bowl, combine the carotino oil, red wine, 15 ml of the cornflour and the bicarbs. Add the beef, tossing to coat. In a small bowl, whisk together the stock, vinegar, xylitol and the remaining 5 ml cornflour; set aside.

In a large frying pan, heat 5 ml of the oil over moderately high heat. (A wok or electric frying pan can also be used.) Add the beef and stir-fry for 2 - 3 minutes or until just cooked through. With a slotted spoon, transfer the beef to a plate.Add the remaining 5 ml oil, the ginger and garlic to the pan and stir-fry for 30 seconds. Add the cabbage, spring onions and asparagus and cook for 2 minutes.Stir the stock mixture to recombine, add to the pan and bring to a boil. Cook, stirring, for 1 minute. Reduce to a simmer, return the beef to the pan and cook for 30 seconds or until just heated through. Enjoy!

Chicken and Grapefruit Salad

Warning: Please be very careful with your intake of Citrus - for MS-patients, pomelo and lemon are the safest fruits in the Citrus family. Too much citric acid (oranges and naartjies) may cause gout, too much uric acid and it may mess up your stomach-lining.

Ingredients:
4 grapefruits
30 ml light mayonnaise (I prefer to make my own)
15 ml finely chopped mango chutney (also my own)
10 ml mustard
5 ml sesame oil
1,25 ml each Himalayan salt and cayenne pepper
350 g skinless, deboned chicken breast, poached and cubed
60 g watercress, tough stems trimmed
1 Belgian endive, cut crosswise into 1-cm-strips
1 head butter lettuce, separated into leaves (if you don't use the endive and/or watercress, use more lettuce, but add fresh rosemary and thyme)

Preparation:
With a small paring knife, peel the grapefruits. Working over a bowl to catch the juice, separate the grapefruit sections from the membranes, reserve any juice that collects in the bowl. In a medium bowl, whisk together the mayonnaise, chutney, mustard sesame oil, salt, pepper and 45 ml of reserved grapefruit juice. Add the chicken, tossing to combine. Add the watercress, endive and grapefruit sections and toss. Serve the salad on a bed of butter lettuce. Enjoy!

Chicken Bigarade

Citrus: These popular snack fruits are outstanding sources of vitamin C; they also supply folate and fibre as well as flavonoids ~ cancer-fighting compounds. Naartjies and oranges also contain compounds called terpenes, which seem to limit the body's production of cholesterol. Terpenes also fight cancer by deactivating carcinogens. Citrus fruits contain pectin, a type of dietary fibre that can lower blood cholesterol levels.

Ingredients:
15 ml olive oil
4 skinless, boned chicken breasts
30 ml gluten-free flour
1 red pepper, diced
20 ml xylitol or sugar of your choice
60 ml balsamic vinegar
15 ml thinly slivered orange rind
125 ml natural orange juice (Liqui Fruit)
125 ml chicken stock
2,5 ml Himalayan salt
1,25 each rosemary and cayenne pepper
5 ml cornflour blended with 15 ml water
2 navel oranges

Preparation:
In a large pan, heat 10 ml of the oil over moderate heat. Dredge the chicken in the flour, shaking off the excess. Sautè the chicken for 2 minutes per side or until lightly golden. Transfer to a plate. Add the pepper and the remaining 5 ml oil and sautè for 3 minutes or until crisp-tender. Add to the plate with the chicken.
Add the xylitol to the pan and cook for three minutes or until caramelized. Add the vinegar and cook for 30 seconds. Add the orange rind, orange juice, stock, salt, rosemary and cayenne pepper and bring to a boil.

Return the chicken and pepper to the pan, reduce to a simmer, cover and cook for 7 minutes until the chicken is just cooked through. Stir in the cornflour mixture and boil for a minute, stirring, until slightly thickened. Meanwhile, with a small paring knife, peel the oranges. Separate the orange sections from the membranes and stir the segments into the pan. Serve the chicken with the sauce and oranges.

Serves: 4

Casein-Free Tandoori Chicken

Ingredients:

Chicken Drumsticks – 8
Red Chilli Powder – 1/4th tsp
Black Pepper – a few pinches
Turmeric Powder – 1/8th tsp
Fresh Ginger and Garlic Paste – 1 tbsp
Cumin Powder – 1/8th tsp
Coriander Powder – 1/4th tsp
Extra Virgin Olive Oil – 1tbsp
Juice of one lemon
Salt to taste (Preferably Himalayan)
Olive oil spray

Preparation:
Skin the drumstick pieces and using a sharp knife just poke each drumstick piece at three or four spots. Mix all the spices with lemon juice and olive oil and apply the paste to each drumstick. Let the drumsticks soak in the spice mixture for at least four hours (in refrigerator). Just when ready to make tandoori chicken, pull out the drumsticks and pre-heat the oven to 350F. Spray the olive oil spray in a glass baking tray and arrange the pieces. Let the chicken bake for 30 minutes (turn the pieces around after 15 minutes). For another 15 minutes, set the oven at 450F and let the chicken bake further but please make sure to pull out the tray and turn the pieces around so the pieces bake evenly.

Transfer into a serving plate and enjoy the tandoori chicken with a salad of your choice.

Preparation Time: About 50 minutes active cooking time

Chicken with Broccoli and Mangoes

Ingredients:
Chicken Breasts – 2
Broccoli – 2 heads
Mangoes – 2 (diced)
Tomatoes – 2 (diced)
Onions – 2 (diced)
Minced Garlic and Ginger - 1 tbsp
Cayenne Pepper – a few pinches
Himalayan Salt – per your taste
Olive oil – 1 tbsp
Chicken stock – ¼ cup
Olive oil spray

Preparation:
Preheat the oven to 400 F. Cut the chicken breasts into inch-sized cubes. Heat up the oil in a wok or a heavy-bottomed steel pan. Fry the onions for a minute and then add the minced ginger and garlic; let these cook for ½ minute. Then, add the chicken breasts pieces and cook them on high for about 5 minutes. Mix in the broccoli and cook for a minute. Add salt and pepper and toss the ingredients around. Then, mix in chicken stock and transfer the ingredients onto a baking tray. Bake for 15 minutes. Pull out the tray after 15 minutes and add tomatoes and mangoes. Stir the ingredients and bake for another five minutes. Serve this on a bed of brown/wild rice or GFCF bread. Enjoy!

Asparagus and Chicken Stir Fry

White asparagus is an impressive source of folate. It also provides vitamin C, beta carotene and vitamin E. Folate is vital to tissue growth and thus plays a role in the prevention of certain birth defects. Folate may also help prevent cancer of the cervix, and is one of the three B-vitamins that help fight heart disease! Throw out the water after cooking asparagus and you discard nutrients too. So try to include the cooking liquid in the dish. If stored at room temperature, fresh asparagus will lose as much as half of its vitamin C within two days.

Ingredients:
15 ml Olive oil
6 Spring Onions - thinly sliced
350 g skinless, boned Chicken breasts, cut across the grain into 1-cm-wide pieces
700 g Asparagus, trimmed and cut into 5-cm lengths
170 g Peas
125 ml Chicken Stock
2,5 ml grated Lemon rind
1,25 ml Himalayan Salt
3 Radishes, cut into matchsticks (Optional)
5 ml Cornflour blended with 15 ml water



Method:
In a large frying pan or wok, heat 10 ml of the oil over moderate heat. Add the spring onions and sauté for 1 minute or until they are wilted. Add the chicken and sauté for 3 minutes or until it is no longer pink. Add the remaining oil and the asparagus and sauté for 2 minutes to coat the asparagus. Add the peas, stock, 125 ml water, the lemon rind and salt an bring to a boil. Reduce to a simmer and cook, uncovered, for 2 minutes or until the chicken and asparagus are just cooked through.
Stir in the radishes and the cornflour mixture and cook, stirring for 1 minute or until the sauce is slightly thickened. Enjoy!

Turkey with Peppers and Carrots

Ingredients:
Turkey Breast Cutlets – 4
Onions – 2 (diced)
Tomatoes – 2 (diced)
Diced Peppers (mixed colors) – 2 cups
Carrots – 2 cups
Cayenne Pepper – a few pinches (or per your taste)
Cumin Powder – ½ tsp
Fresh Ginger & Garlic paste – 2 tsp
Salt to taste
Olive oil – 2 tbsp

Preparation:
Preheat the oven to 300F. Cut the turkey breast cutlets into cubes. Marinade the turkey breast pieces in a mixture of salt, pepper, cumin powder, and ginger and garlic paste for about two hours. In a large pan, heat up the oil and put the turkey pieces. Fry them on high for about 3-5 minutes. Then add in the onions, tomatoes, peppers and carrots. Stir well and let this cook for another five minutes or so. When ready, transfer the mixture onto a baking tray. Bake it covered for 45 minutes stirring every 15 minutes; turkey gets cooked in its own juices combined with the vegetables. Serve this with rice or bread. Enjoy!!!

Chicken with Red Sorrel Leaves and Spinach

Ingredients:
Chicken Thighs – 4 (each thigh cut into four pieces or so)
Diced Onion – ½ cup
Tomatoes – 2 (diced well)
Fresh Ginger and Garlic Paste – 1 tbsp
Steamed Red Sorrel Leaves – 1 cup
Steamed Spinach – ½ cup
Salt to taste (preferably Himalayan)
Red Chilli Powder – 1/4th tsp
Coriander Powder – ½ tsp
Turmeric – 1/4th tsp
Water – About a cup
Olive oil – 2 tbsp

Preparation:
Red Sorrel leaves are sour in taste and very rich in iron. If you have low hemoglobin, this is highly recommended. Also, the juice of these leaves is used in treating jaundice and fever. There are many other medicinal properties for these leaves; it is supposed to relieve indigestion or an upset stomach and common cold.

Clean the chicken and marinade it with salt, chilli powder, coriander powder, turmeric and a tablespoon of oil for at least two hours. In a large steel pan, heat up the other tablespoon of oil and add the diced onions and give them a stir. Then add the ginger and garlic paste. Let this cook for about a minute. Then, add in your marinaded chicken and tomatoes and allow the chicken to cook up with its own juices for about 15 minutes on medium heat.

Blend the steamed red sorrel leaves and spinach with the water and some salt (optional). Transfer the blended mixture to the chicken. Mix well and allow the chicken to cook for another five to ten minutes or until the meat is tender (you could add 1/2 cup of water if you like more gravy).
Serve this with a cup of brown rice.
