Turkey with Peppers and Carrots

Ingredients:
Turkey Breast Cutlets – 4
Onions – 2 (diced)
Tomatoes – 2 (diced)
Diced Peppers (mixed colors) – 2 cups
Carrots – 2 cups
Cayenne Pepper – a few pinches (or per your taste)
Cumin Powder – ½ tsp
Fresh Ginger & Garlic paste – 2 tsp
Salt to taste
Olive oil – 2 tbsp

Preparation:
Preheat the oven to 300F. Cut the turkey breast cutlets into cubes. Marinade the turkey breast pieces in a mixture of salt, pepper, cumin powder, and ginger and garlic paste for about two hours. In a large pan, heat up the oil and put the turkey pieces. Fry them on high for about 3-5 minutes. Then add in the onions, tomatoes, peppers and carrots. Stir well and let this cook for another five minutes or so. When ready, transfer the mixture onto a baking tray. Bake it covered for 45 minutes stirring every 15 minutes; turkey gets cooked in its own juices combined with the vegetables. Serve this with rice or bread. Enjoy!!!
