Inspired by Shannon Assion, I made raw spaghetti with avocado sauce. Not only was it delectable, it just was more than enough for my lunch. It is packed with nutrition and is MS friendly. You would need a spiralizer for this recipe. I use Paderno World Cuisine Tri-Blade Plastic Spiral Vegetable.
Ingredients:
Raw Spaghetti with Avocado Sauce |
Zucchini - 1
Medium-sized Avocado - 1
Hemp oil or Extra Virgin Olive oil
Sun-dried Tomato - 1
Garlic Cloves - 3
Herbs of your choice (rosemary or thyme work best)
Pinch of Himalayan salt
Water - 1/4th cup
Sunflower Seeds - 1 tbsp
Raisins - 1 tbsp
Preparation:
- Run zucchini through a spiralizer. Set the raw spaghetti aside.
- Blend the rest of the ingredients except sunflower seeds and raisins to make avocado sauce.
- Combine zucchini and avocado sauce thoroughly and top it off with sunflower seeds and raisins.
- Alternately, you can add any other leafy greens or vegetables you like.
- Enjoy!
