Simonetta's Spinach Cake

2 bunches spinach
300 grams vegan cream cheese 
2 eggs or 4 egg whites
Gluten-Free Breadcrumbs, approximately 1 cup
Salt and Pepper to taste


  • Preheat oven to 200 °C
  • Boil the spinach until cooked. Set aside to cool and then squeeze as much of the cooking water as possible from the cooked spinach.
  • Chop the cooked and drained spinach.
  • Into a bowl mix together the spinach, cheese, breadcrumbs, salt and pepper until amalgamated.
  • Pour the resulting batter into a cake tin lined with baking paper. Cook for approximately 20-25 minutes.
  • Serve.
