Turnip Salad - Mint Dressing

Turnips are an excellent source of vitamin C, fiber, folic acid, manganese, pantothenic acid, and copper. They also provide thiamine, potassium, niacin, and magnesium. Calorie-wise they  have far fewer calories than potatoes. 

Salad Ingredients:
Turnip - 1
Carrots - 1
Collard Greens - 2 cups (chopped)
Apple or Nectarine - 1

Dressing Ingredients:
Mint leaves - 1/4th cup
Lime - 1
Extra Virgin Olive oil - 2 tbsp
Tomato - 1
Garlic - 2 cloves
Himalayan Salt to taste
  • Chop the salad ingredients in desired shapes. Set aside.
  • Blend the ingredients for dressing in a food processor.
  • Pour the dressing over the salad, toss the vegetables and enjoy.
Serves: 3 or 4
