Roasted Vegetable Salad

Ingredients:
Diced Vegetables - 2/3 cups
Harissa Paste - 1 tsp or depending on your ability
Glug of Olive oil
Juice of an orange and some zest
Cooked Lentils - 1 cup
Chopped Coriander - 1 tbsp
Toasted slivered almonds - 1/4th cup

Preparation:
Harissa paste is made out of piri piri chillies. It is quite spicy. We will most likely see a recipe for Harissa paste some time soon.

Mix harissa paste with olive oil and the juice and grated peel of orange. Toss through diced vegetables and roast until cooked through and slightly charred (like a stir fry by setting flame on high). Season and serve tossed through cooked lentils. Scatter with chopped coriander and toasted almonds.

Preparation Time: 10 minutes

Serves: 3
