Carambola or Star Fruit

By: Esther Vasa

For the past two days I have had the privilege of tasting some exotic fruits. One of my colleagues, Bojie He from China has been speaking to me about some of these interesting fruits. Today, I enjoyed a few stars from the Star Fruit or Carambola. I give it five stars! It has a rich, smooth and glossy exterior which is edible. Make sure your fruit is slightly yellow in color. You could cut stars and remove the seeds and serve it as a dessert. This fruit is rich in Vitamin C, fiber and antioxidants. It is also low in sodium and sugars compared to the other fruits.

The other option you have with this fruit is, you could bake it for about 3-5 minutes by sprinkling some brown sugar and lemon juice. If you enjoy the taste of cinnamon, dust some cinnamon powder for additional flavor.

You could also juice it with a pinch of salt and a tsp of lemon juice.
