Indian Broad Beans with Dill

Ingredients:
Indian Broad Beans or Fava Beans – 4 cups
Diced Spring Onions or Scallions – 1 cup
Chopped Dill Leaves – 1/4th cup
Grated coconut – 1/4th cup
Olive oil – 1 tbsp
Nutmeg – 2 pinches
Salt to taste
Cayenne Pepper – few pinches
Cumin Powder – 1/4th tsp
Diced Garlic – 2 tbsp

Preparation:
Indian Broad beans are also known as “Chukkudukaya” in Telugu. Heat up a steel pan and add the oil. Then, add the broad beans and the spices (salt, nutmeg, cayenne pepper and cumin powder). Stir the ingredients well and set the flame on high for five to eight minutes by stirring every minute. By this time the broad beans should be cooked. Add the dill leaves and spring onions and give it a stir. Finally garnish with garlic and coconut. Serve it with gluten free casein free bread.
