Cucumber and Tomato Salad

Ingredients:
Romaine Lettuce head – 1
Cucumbers – 2
Cherry Tomatoes – 2 cups
Baby carrots – 10 cut into 1/2
Himalayan Salt – per taste
Cayenne Pepper – few pinches
Minced Garlic – 3 cloves
Extra Virgin Olive Oil – 3 tbsp
Juice of one lemon

Preparation:
Cucumbers are good for your skin because of their diuretic properties. They are rich in potassium and hence are good for people with high blood pressure. It is good for people with diabetes. Cucumber is a natural coolant as well.

In a bowl, put the minced garlic and add the olive oil, salt, pepper and lemon juice and using whisk thoroughly mix the ingredients.

Clean the lettuce and cut into bite sized leaves. Cut the cucumbers lengthwise and later cut them into semi-circle shape. Mix the lettuce, cucumbers, carrots and tomatoes in a salad bowl. Pour the prepared salad dressing over the salad. Using tongues mix your salad to let the dressing on each vegetable. For a couple of days now I have been enjoying this salad.

Preparation Time: Less than ½ hour

Serves: 4
