Gluten-Free, Vegan Pancakes

Ingredients:
Millet flour or Gluten-Free flour – 2cups
Almond Milk – 2cups
Banana - 1
Organic Maple Syrup – 2tbsp
Vanilla Essence – 1tsp
Sea Salt – 1/8th tsp
Baking Powder – 1 tsp
Coconut Oil or any other oil  you prefer for frying the pancakes

Preparation:
Blend all the ingredients in a blender for 2-3 minutes. Transfer into a bowl. On a frying pan, spray some cooking spray and using a slightly hollow ladle put one ladle of batter on the pan. Wait till you see the bubbles on the top and turn it and let it sit on this side till the pancake is done. My son really enjoyed these pancakes and I was surprised at this!

You could serve your pancakes with homemade maple syrup. I will share the recipe for homemade maple syrup some time soon. I try making the maple syrup at home mainly because the ones we bring from grocery store have high fructose corn syrup which is not at all good for anybody and especially for Multiple Sclerosis patients.

Preparation Time: About ½ hour
