Healthy Guacamole

Ingredients:
Ripe Avocados – 2 with the flesh scooped
Medium-sized Onion – ½ diced
Medium-sized Tomato – 1 diced
Carrot – 1 finely chopped
Jalapeno – ½ seeded and chopped
Fresh Cilantro – 1/3rd cup
Juice of ½ a Lemon
Sea salt – Few pinches (optional)

Preparation:
Avocados are considered as fruits that contain carotenoid lutein which is very good for your eyes. Per my research, these are the only fruits that contain mono and poly unsaturated fats especially the mono. Instead of using a high calorie dip for your veggies, go for this nice guacamole. You are sure to enjoy the great taste as well as receive the essential minerals and nutrients your body needs.

With a spoon or fork mix the avocados thoroughly in a mixing bowl. Add the rest of the ingredients and mix well with the same spoon or fork. Seal the bowl and let this sit in the refrigerator for an hour. You could use this for your sandwiches or salads or as a dip to your raw vegetables.

Preparation Time: 20 minutes

Serves: 2-3
