Jun - A Fermented Beverage

Ingredients:
SCOBY for Jun
Jun second fermented with huckleberries
Green Tea - 2 tsp or two tea bags for quart of tea **
Water - 1 cup
Raw Honey - 1/4th cup
Starter Tea - 1/4th cup (Reserved from last batch)

Method:
  • Boil water, steep tea for 10 mins, cool to 115F and add honey.
  • Add to jar, when cool add starter tea and fill with water.
  • Add SCOBY.
  • Ferment to taste.
  • Add fruit for second ferment, if desired.
  • Tea will carbonate in 1-2 days with the addition of sugar or fruit in an anaerobic environment.
  • ENJOY!
 ** Make sure you use Green Tea ONLY. Do not use flavored Green Tea as that will potentially kill the SCOBY.

Juicing Fun: Choose Your Juice
According to Dr. Mercola, there are three main reasons why you will want to consider vegetable juicing:
1)  It allows you to absorb all the nutrients from vegetables
2) It allows you to consume an optimal amount of vegetables in an efficient manner 
3) It helps you add a variety of vegetables to your diet. Virtually every health authority recommends getting 6-8 servings of vegetables and fruits per day, which very few people actually get.

Green Juice

Green Juice
After Christmas parties and heavy meal intakes the whole of December, this juice helps in detoxing.

Jicama and Roots Juice

Jicama and Roots Juice

Jicama is a low-calorie root vegetable. It consists of dietary fiber, and anti-oxidants, in addition to small proportions of minerals, and vitamins. It is one of the finest source dietary fiber and excellent source of oligofructose inulin, a soluble dietary fiber. Inulin is a zero calorie, sweet inert carbohydrate and does not metabolize in the human body, which make the root an ideal sweet snack for diabetics and dieters. It is rich in vitamin C that helps body scavenge harmful free radicals, thereby offering protection from cancers, inflammation and viral cough and cold. It also contains small levels of some of valuable B-complex group of vitamins such as folates, riboflavin, pyridoxine, pantothenic acid and thiamin. It provides healthy amounts of some important minerals like magnesium, copper, iron and manganese.

Ingredients:
Jicama - 1/2 (peel and slice)
Carrots - 4
Beet - 1/2
Cucumber - 1
Ginger - a big piece
Limes - 2
Apple - 1
Orange - 1

Preparation:
This is a nice refreshing summer drink especially on a day like today where all I feel is heat and humidity! Enjoy. 

Orange Zinger Juice

This juice has a rich orange color based on the ingredients used. I called it as "Orange Zinger Juice" as it has a nice tang to it from the orange and lime. I thought it has a distinctive flavor from star fruit as well. This makes a thoroughly refreshing summer drink. Try it!
Orange Zinger Juice

Ingredients:
Orange - 1 or a cup of cantaloupe pieces
Apples - 2
Star Fruit - 1
Carrots - 3
Cucumber - 1
Ginger - 1 inch piece
Juice of one Lime

Preparation:
Juice all the above ingredients except lime. Add the juice of one lime and enjoy this refreshing drink right away. Makes about 32-35 ounces of juice. If you like, you may add a few ice cubes into each glass of juice.

Dandy Juice

This is very good and tasty juice made with dandelion greens and hence I called it "Dandy Juice".

Dandelion Greens have many minerals and vitamins and have both curative and preventive properties. Some call it "miracle greens". No wonder they call it miracle greens because it helps with detoxifying liver, kidneys, for removing kidney stones, fighting and preventing certain types of cancers, correcting digestive disorders and also for fighting inflammation. I am not at all surprised that the Chinese used this in their herbal treatments.

Upland Cress can help strengthening immune system, promotes cardiovascular health, provides energy and is supposed to reduce stress.

Ingredients
Dandelion Greens - 1/4th bunch
Upland Cress - 1/4th bunch
Kale - 6 large leaves
Spinach - a big handful
Parsley - a handful
Mint - a handful
Ginger - 1 inch piece
Granny Smith Apples - 2

Preparation
Juice them away. Makes about 20 ounces juice.

Detox Juice

Beets help in liver detox. The best way to consume beets for a liver detox is by juicing them. For this detox juice recipe, we will be using a mix of detox vegetables, a piece of ginger root and an apple for sweetening. This juice is good for consuming on a regular basis. But, if you want a thorough liver detox, have beets everyday for a minimum of seven days. Since we have purchased an Omega VRT 350 HD juicer (seen in the picture), this has become a daily ritual at home. Surprisingly, my 12-year old demands more of vegetable juice everyday! 

Ingredients:
Carrots - 2 large
Beet - 1/2
Curly Kale - 6 large leaves
Cucumber - 1
Celery Sticks - 2
Cilantro - 3 sprigs
Ginger - a small piece
Granny Smith Apple - 1

Preparation:
Juice all the ingredients. If you don't have a juicer, no worries. Simply blend all the ingredients thoroughly with ample amount of water and strain. You can use the pulp for smoothies at some other time. Happy detoxing!

Wheat-grass juice can be digested very easily. It requires only minutes to digest it.

Refreshing Ginger Zing

4,5 liters of luke warm water
3 tablespoons Xylitol, or stevia to taste
1½ teaspoons cream of tartar
1½ teaspoons scorbic acid (from a pharmacy or health shop)
3 teaspoons ginger powder
50 ml freshly squeezed lemon juice
100 ml pitted raisins
Skins of one pineapple (optional)
2 – 3 slices fresh, crushed ginger (optional)

Mix all the ingredients together. Stir until the xylitol is dissolved. Cover the bowl/bucket lightly and let it stand covered in a cool area for ±12 hours.

Pour the mixture through a soft cloth or sieve into storage bottles. (This removes all solids from the mixture.)

Store in the refrigerator and serve chilled.

Pom-Apple Zing

An organic apple
Pomegranate - 1 cup (seeds)
Mint or basil - a couple leaves
Ginger - a small piece
Juice of one lime or lemon (or lesser if you prefer)
Pure Water - about 1-2 cups

Blend or juice all the ingredients. Serve cold. Play around with the ingredients! Enjoy...

The Green Alkalizer

1 Granny Smith apple
½ grapefruit
½ cucumber
½ lemon
5 celery sticks
4 spinach leaves
1 sprig parsley
1 segment of fennel
1 kale leaf

Juice all the ingredients and dilute with water. Makes 500 ml. Dilute with the same quantity of water to make 1 litre.

Homemade Cranberry-Orange Juice and Sauce

Ingredients:
Note: If you are making this for a Thanksgiving dinner, multiply your quantities as needed. I usually like to prepare fresh juice and sauce and use it for the day. You can freeze the unwashed leftover cranberries and bottle the sauce for later use.

Cranberries are a good source of Vitamin C and are known to prevent urinary tract infections, bladder infections and kidney stone formation. They are a great alternate to antibiotics and have probiotics to promote the gastrointestinal health. Multiple Sclerosis fighters are prone to UTIs and this berry has the power to fight it off naturally. I have used homemade cranberry juice to fight off my infections and would like to share the recipe with my co-fighters. Please refrigerate the berries for use in the spring and summer months.

For Juice
Fresh or frozen Cranberries - 1 cup
Water - 2 cups
Grated Orange rhind peel - 1 tbsp (or one orange's)
Juice of one whole orange
Brown Sugar or Molasses - 1 tbsp (optional; I don't prefer using)
Himalayan Salt - a pinch

For Sauce
Brown Sugar or Molasses - 1 tbsp
Crushed cinnamon - a pinch

Juice Preparation:
Boil the cranberries and orange rhind peel on medium heat until the berries burst and thereafter a couple minutes. Towards the end, add orange juice and brown sugar or molasses if you are using. Let this mixture boil until sugar melts. If you are not using sugar just boil cranberries and the orange juice for a minute. Strain and let cool in the refrigerator. Serve chilled. Makes two cups.

Sauce Preparation:
Use the strained mixture and mix it with a tablespoon of brown sugar and boil on low for 5 minutes. Add cinnamon towards the end. Let cool and transfer into a glass jar and store in refrigerator. Makes about 1/4th cup. Your kids can use this as bread spread! Goes well with grilled chicken and/or mashed potatoes. Enjoy.

Beets and Carrot Leaves Juice

Ingredients:
Beets – 1/3rd
Carrots – 1
Carrot Leaves – 5 sprigs
Mandarin Orange – 1 peeled and deseeded
Water – 5 cups
Salt (optional)
Ginger (optional)

Preparation:

My son brought carrots with leaves and gave me this idea of using carrot leaves. I first did my check to make sure the carrot leaves are edible. Surprisingly, the carrot leaves are rich in vitamin K along with other minerals! I tasted the raw leaves and they were slightly bitter and mildly sour. Felt this would be a great replacement for parsley leaves. This drink tasted good enough to me.


Juice all the ingredients.
Preparation Time: 15 minutes

Serves: 3

Guava-Chamomile Drink

Ingredients:
Medium-sized Guava – ½ seeded and diced
Chamomile Tea Bag – 1
Water – 3 cups
Stevia – optional
Juice of ½ Lime

Preparation:

Guava is a tropical fruit very high in vitamins C and A. Rich in antioxidants this fruit has the potential to fight cancers related to the digestive system.


Boil two cups of water and drop the chamomile tea bag in it and allow the tea to cool down. Then, put the diced guava, chamomile tea, sweetener and lime juice in a blender and blend for 3-4 minutes. Transfer this into serving glasses. This is a very refreshing drink and I love the smell of guava blended with chamomile. It is so flavorful and savoring!

Preparation Time: 10 minutes. It takes an hour for the chamomile tea to seep in the water and cool naturally.
