Corn Tortilla Vegan Wraps

For this recipe you will need Gluten Free and Non-GMO Masa Harina Corn Flour to make tortillas. You can get this from Bob's Redmill or may be check in your local Whole Foods market. Also, you need GFCF Nutritional Food Yeast for the filling.

Nutritional Yeast is rich in protein, essential amino acids and B-Complex. B-Complex is essential for the wellness of body and mind. Thiamin (B1) deficiency can lead to hand and foot numbness as well as damage to the central nervous system. Vegetarians, diabetics, and women taking birth control pills are highly susceptible to Riboflavin (B2) deficiency and Niacin (B3). Pyridoxine (B6) is needed for the production of antibodies and red blood cells, and promotes a normal functioning nervous and musculoskeletal systems. Cyanocobalamin (B12) helps prevent nerve damage and anemia, aids in cell and blood formation, proper digestion, fertility and growth. This vitamin is also helpful during pregnancy and lactation. Vegetarians and immune compromised individuals are the most at risk of vitamin B12 deficiency. (Thanks to Bulkfoods for information on B-vitamin deficiencies). Having a tablespoon of nutritional yeast every day can help get the required B-Complex for your body.

Ingredients:
Homemade Corn Tortillas using the GFCF and Non-GMO Masa Harina Corn Flour - 4 ( one for each individual)

For Filling
Onion - 1 (cut into half-moons)
Cremini Mushrooms - 2 cups (sliced)
Bell Peppers - (1 cup)
Kale - 2 cups (cut into bite size)
Carrots - 1 cup (julienne cuts)
Crushed Garlic - 1 tbsp
Nutritional Yeast - 2 heaped tbsps
Salt and cayenne pepper to taste
Olive oil - 1 tsp

Preparation:

  • Make corn tortillas per the instructions on the Masa Harina corn flour packet.
  • Heat up oil and add onions and allow them to sweat. Then add cremini mushrooms and sauté them for 3-4 minutes. Then, add bell peppers and carrots and sauté them for two minutes. Turn off the heat and add kale, garlic, salt and pepper and toss well. Cover and allow to cool down naturally. After about 15 minutes or so, add nutritional yeast and stir well. This gives cheesy flavor to the filling while adding some nuttiness.
  • Fill each wrap with the filling and fold into a wrap and serve immediately with either some marinara sauce or organic tomato ketchup on the side. Enjoy!
