Violet Yam Stir Fry

Violet Yam or Ratalu is rich in fiber, carotene, Vitamins B6 & C, minerals like potassium & calcium, low in sodium & glycemic index. Remember, all root vegetables are good for people with MS because they have orotic acid that was/is used to treat MS. By mixing it with other vegetables you are only increasing your intake of nutrients. Now, let us see how to make this quick and palatable dish.

Ingredients:
Violet Yam cut into bite sized pieces – 2 cups
Steamed Green Peas – 1 cup
Steamed French Beans – 1 cup
Large Onion – 1 (diced)
Diced Carrots – 1/4th cup
Grated Ginger – 1 tsp
Turmeric – 1/4th tsp
Cayenne Pepper – a few pinches
Salt (preferably Himalayan) – per your taste
Extra Virgin Olive oil – 1tbsp
Cilantro for garnishing (optional)


Preparation:
Steam violet yam until cooked but not too soft; should be crispy to the bite. Heat up oil in a wok and let the onions fry for a minute. Then add the steamed green peas and French beans and fry these for three minutes or so. Next, add steamed violet yam, salt and pepper; let the veggies cook for another four minutes. Finally, add diced carrots, grated ginger and cilantro and give it a good stir. You could enjoy the stir fry with either bread or pasta.
