Rich gooey goodness of okra combined with its top-class fiber helps regulate blood sugar and in maintaining a healthy gastro-intestinal tract. For those of you needing probiotics back into your gut, this is a must-enjoy vegetable. Also, helps is losing weight, reducing cholesterol and removing toxins!
Ingredients:
Medium-sized okra – 30
Large Onion – 1 (diced)
Tomatoes – 3 (diced)
Tamarind – lemon sized ball soaked for an hour
Curcumin or Turmeric – 1/4th tsp
Cumin Powder – 1/4th tsp
Garlic Cloves – 6 (minced)
Cayenne Pepper – a few pinches
Himalayan Salt per your taste
Extra Virgin Olive oil – 1 tbsp
Cilantro – 1/4th cup to garnish
Preparation:
Make sure you clean and trim the ends of okra. Cut them into bite-sized pieces and set aside. Also, extract tamarind juice from the soaked tamarind. You will get about two cups of juice approximately. Heat up the oil in a wok and add the onions; let them cook for a minute. Then, add the okra pieces and give them a good stir for about two minutes. Then add the tomatoes, garlic and the rest of the ingredients except cilantro. Let the okra cook in the tamarind juice and spices for about eight to ten minutes. Transfer into a serving bowl and garnish with cilantro leaves. I enjoy this with gluten free casein free bread or brown rice.
Variations:
Instead of okra, you can use bitter gourds and make a similar dish.
