Radish Greens & Peanuts

RADISH GREENS: Majority of nutrition from radishes is packed in the greens. I usually get radishes from the farmer's market with greens intact. Use the radishes in a salad and make a stir fry or a smoothie with greens. These greens are rich in vitamin C, potassium and folate. Enjoy them in a stir fry as shown below! Never discard these greens.

Ingredients:
Radish Greens - 1 bunch (washed well and chopped)
Peanuts - 1/2 cup
Onion or Shallot - 1 (diced)
Himalayan Salt - per taste
Red Chilli Powder - 1/4th tsp or per your taste
Garlic Cloves - 5 (minced)
Olive oil - 1tbsp

Preparation:
Make sure you roast or toast the peanuts and crush them using a blender or food processor. Set these aside. Heat up oil in a wok and add diced onion and stir for a minute. Then add in the chopped radish greens, salt and pepper. Fry the ingredients for about 8-10 minutes or until the greens are tender. Mix in the crushed peanuts and stir the ingredients for a minute or two. Finally garnish with minced garlic and serve it with bread or brown rice. Enjoy!
