Gluten Free Muesli

Gluten Free Rolled Oats – 6 cups
Honey – 3/4th cup
Extra Virgin Olive Oil – ½ cup
Organic Vanilla Extract – 1 tsp
Cinnamon Powder - 1/2 tsp
Combo crushed nuts (almonds, walnuts, pistachios, pecans, hazelnuts…) -1 cup
Seeds like pumpkin and sunflower seeds – 1/4th cup (optional)

Combine all the ingredients and bake them at 300F for about 30 minutes or until you get that light brown color. Please pull out the baking tray and mix the ingredients every ten minutes or so. Enjoy your muesli with fresh fruits like banana or strawberry and some almond/rice milk. If you are not on a casein free diet, use regular milk. You could have this for your breakfast or as an evening snack. You could reduce the amount of nuts and seeds in this recipe if you like.

Preparation Time: About 45 minutes

Serves: 5-6
