By: Esther Vasa

KALE is an incredible anti-inflammatory food that can not only reduce the inflammation but also helps reverse it and is a recommended vegetable for us PwMS and Rheumatoid Arthritis etc., It is also rich in omega 3 fatty acids, fiber, vitamins A, C and iron. The nice curly leaves of this cruciferous vegetable have immense capacity to heal our bodies naturally. These leaves have phytonutrients that help fight various types of cancers. They are loaded with beta-carotene and carotenoids like lutein and zeaxanthanin. These carotenoids help keep UV rays from damaging the eyes and causing cataracts. The calcium from kale may prevent osteoporosis. Manganese in kale helps our body's own antioxidant defense system, superoxide dismutase, protecting us from damaging free radicals. Kale's folate and B6 combine to keep homocysteine levels down, which may help in preventing cardiovascular problems and memory loss.
