Sweet Potato Smoothie

Ingredients:
Sweet potatoes – 2
Flaxseed meal – 2 tbsp
Walnuts – 1/4th cup soaked overnight in water
Pure Vanilla Extract – 1 tsp
Water – 3 cups

Preparation:
Sweet potatoes are rich in fiber and complex carbohydrates. They also have vitamins A and C, calcium, iron and protein. Flaxseed meal is rich in omega-3 fat and fiber. Flaxseeds promote bone health, fight cancer, reduce cholesterol and control blood pressure. Almonds are a heart-healthy food! These nuts have cholesterol reducing power and helps maintain healthy blood sugar levels. For this smoothie we are using all these three ingredients that are so vital for our well-being.

Bake the sweet potatoes for 45 minutes at 350F. Then peel, cut and put them in blender along with rest of the ingredients. Blend for 3-4 minutes. If you like your smoothie cold, add some ice cubes while blending. Serve either at room temperature or cold by transferring into glasses.

Preparation Time: 1 hour (including the baking time of sweet potatoes)

Serves: 3
