Raw Papaya Salad

Here are a few good reasons why you should include papaya in your diet! Papaya especially the raw papaya is good for your digestive system because of proteolytic enzymes in it. It is a good source of fiber, Vitamins C and E, carotenoids and bioflavonoids which are phytochemicals.

Grated Raw Papaya – 4 cups
Juice of one lemon
Salt to taste
Green Chilies – 3 cut into tiny bits
Mustard seeds – ½ tsp
Ginger – ½ inch stem finely chopped
Extra Virgin Olive Oil – 1 tbsp
Cilantro leaves – 1 cup
Curry Leaves – about 6

In a steel pan, put the oil and let it warm up. Add the mustard seeds and allow them to splutter. Add the curry leaves and ginger. Let them warm up a little bit. A wonderful aroma fills the kitchen. Add this to grated raw papaya along with some salt, lemon juice and cilantro. Your salad is ready!

Preparation Time: About ½ hour including the time to grate

Serves: 4
