Beet Salad

Beets – 2 washed, peeled and grated
Green Peas – 1 cup (if frozen, thaw them)
Cherry Tomatoes – 1 cup
Fresh Cilantro – 1 cup
Juice of one lemon
Grated Ginger – 1 tbsp
Salt to taste
Cayenne Pepper – a few pinches
Extra Virgin Olive Oil – 2 tbsp

Beets have the highest sugar among all the vegetables. They help improve haemoglobin, reduce cholesterol level, help treat patients with heart disease and prevent certain types of cancers (esp. the colon).

In a salad bowl, mix the grated beets, green peas, tomatoes, ginger and cilantro. In a small bowl whisk the lemon juice, olive oil, salt and pepper and use this as your salad dressing.

Preparation Time: About ½ hour

Serves: 3
