Baked Flan with Almond Milk

Ingredients:
Almond Milk - 2.5 cups
Egg Whites – 6
Brown Sugar – 1/3rd cup
Pure Vanilla Extract – 2 tsp
Slivered Almonds – 1/4th cup

Preparation:
Make sure you filter the almond milk thoroughly if you are using homemade almond milk.

Preheat oven at 350F. In a baking tray, put about ½ inch level of water. Let this heat while you make the flan mixture ready.

You would need four small bowls that are oven safe. In each bowl, throw in equal amounts of slivered almonds. Put two tablespoons of the brown sugar in a stainless steel pan and caramelize not stirring too much. In each bowl quickly put a teaspoon of caramelized sugar before it solidifies. Set the bowls aside.

Blend the almond milk, egg whites, vanilla extract and the remaining brown sugar in a blender for a minute. Put equal amounts of this mixture in each bowl. Arrange the bowls in the baking tray with water and let this bake for 45 minutes. You can enjoy your flan when it’s warm or cool it and put in refrigerator.
