Lettuce and Dry Fruit Salad

Ingredients:
Lettuce – 1 head
Carrots – 2 cut on the bias
Raisins and craisins – ½ cup
Dried Apricots – few
Dates – chopped lengthwise
Juice of one whole lemon
Canola DHA oil – 2 tbsps
Sea salt and pepper for taste

Preparation:
Make sure you get dry fruits free of sulphurdioxide. Diet rich in greens is the way to go for MS. Canola DHA oil is rich in Omega-3 fatty acids. The salad dressing used here is easy and good. Raisins are rich in potassium while dates are rich in fiber.

Salad dressing:
In a bowl, squeeze the juice of one lemon and put in two tablespoons of canola DHA oil. Whisk these together by adding required amount of salt and pepper.

Separate the lettuce leaves and clean well with water. Then, cut the lettuce into bite size. Place the leaves in a glass salad bowl. Top it with carrots and all the dried fruits you have in hand. Pour the salad dressing and mix it with a pair of clean tongs.

Preparation Time: 20 minutes
