Ingredients:
Broccoli florets – 3 cups
Cauliflower – 1 whole with florets separated
Asparagus – 3 cups cut into bite size
Sea salt, pepper
Extra Virgin Olive Oil – 1 tbsp
Cilantro
Preparation:
Clean broccoli florets, cauliflower florets and asparagus (before cutting) thoroughly in water. On a glass baking tray brush the oil and spread all the vegetables. Sprinkle salt and pepper and cover the tray, and let it bake in the oven for 20 minutes at 350F. By baking it covered, the vegetables get steamed. If you like your veggies crispy, broil for 5 minutes. Garnish with cilantro and serve.
This is a good recipe for patients with diabetes as well. But it is always good to discuss with your dietitian before you adopt a new diet. Decreasing carbohydrate intake while eating small portions of any meal is the right approach for maintaining a good overall health and keep weight under control.
