MELONS ~ these delicious fruits provide plenty of vitamin C. Yellow- and orange-fleshed melons supply beta-carotene which seems to enhance immune function - ideal for MS-patients! Watermelon provides lycopene which seems to have protective effects against all types of cancer, including tumours of the colon, cervix and bladder.
Ingredients:
½ small watermelon (3kg)
640 g spanspek/cantaloupe, cut into balls (4 cups)
480 g honeydew melon, cut into balls (3 cups)
180 g seedless red or green grapes (2 cups)
360 g fresh pineapple cubes (2 cups)
45 ml xylitol or sugar of your choice
600 ml plain yoghurt
10 ml fresh lemon- or lime juice
1 pinch of allspice
Preparation:
With a melon baller, cut the watermelon into balls, remove the seeds and transfer into a large bowl (reserve the shell). Add the melons, grapes and pineapple; sprinkle the fruit with 15 ml of the xylitol. Chill the fruit and watermelon shell until serving time. In a small bowl, combine the yoghurt, remaining xylitol, lemon juice and allspice. Chill until serving time.Spoon as much of the fruit mixture as will fit in the "bowl", reserving the rest for refills. Serve the yoghurt sauce on the side.
