Snake Gourd with Sesame

Ingredients:
Snake Gourd – 1
Onion – 1 diced
Sesame seeds – 1 tsp
Peanuts – 1/4th cup
Red Chilli Powder or Cayenne Pepper – depending on your taste
Salt to taste
Parsley leaves – 1/4th cup
Turmeric – 1/8th tsp
Minced Garlic Cloves – 8
Olive Oil – 1 tbsp

Preparation:
Cut the snake gourd into bite sized pieces. Do NOT throw away the seeds. Take the seeds out and crush them with a small mortar and pestle or use your knife to crush the seeds like you would with garlic cloves. Next, toast the peanuts until light brown in color and put the peanuts in a food processor and let them crush well.

Heat up a steel pan and put the olive oil. When it is warm add the diced onion and stir for a minute or so. Then add the snake gourd pieces and turmeric. Mix well for a minute or so. Then, add cayenne pepper and salt and set the stove on high and stir for about five minutes. Then add the rest of the ingredients and stir for another two minutes or so. Switch off your stove and cover the lid. Leave it for another five minutes or so and then transfer into a serving bowl.
