Kohlrabi and Spinach Salad

Kohlrabi is an alien-looking, green cruciferous vegetable that belongs to cabbage family. It is crunchy to the bite and has taste resembling turnips to me strong like radish. This is loaded with folate, magnesium, dietary fiber, Vitamin C, Vitamin B6 and a whole slew of other essential nutrients our body needs. Spinach has a high source of iron and calcium. Walnuts are brain-like in shape and they definitely are good for your brain because of their high concentration of Omega-3 fatty acids. They are heart-healthy and promote cardiovascular health. They help reduce blood pressure and cholesterol.

Ingredients:
Kohlrabi – 1
Spinach – 1 small bunch
Grape Tomatoes – 1 cup
Baby carrots – ½ cup diced
Walnuts – 10
Balsamic Vinegar – 1 tbsp
White Vinegar – 1 tbsp
Apple Cider Vinegar (with Mother preferably) – 1 tbsp
Juice of ½ Lemon
Crushed Garlic Cloves - 4
Salt – 1/8th tsp
Cayenne Pepper – 2 pinches

Preparation:


  • Peel the tough outer skin of kohlrabi and dice it into bite-sized pieces. Dice carrot as well. Mix all the vegetables in a salad bowl and set aside.
  • In a mixing bowl, put the vinegars, lemon juice, salt and pepper and whisk these thoroughly. This is your salad dressing.
  • Using tongs mix the salad dressing and the vegetables and enjoy your salad cold!
