Ivy Gourd (Tindora) Stir Fry

Ingredients:
Ivy Gourd chopped in circles (2 cups)
Diced Onion – 1
Diced Curry Leaves - 10
Cilantro – 2 sprigs
Mustard seeds – 1/4th tsp
Cayenne Pepper – 2 pinches
Salt per your taste
Ground Cinnamon – 1 pinch
Ground Nutmeg – 1 pinch
Turmeric – few pinches
Extra Virgin Olive Oil – 2tsp
Diced Garlic – 4 cloves

Preparation:

Heat up the oil slightly and add the mustard seeds and allow them to splutter. Set the stove at high and add the curry leaves and onions and allow them to sit for a few seconds. Then add the ivy gourd and stir for about a minute. Add the rest of the ingredients except garlic. Now let this stay for about 5 minutes and stir occasionally. Finally add in the garlic and stir for 15 seconds and remove from stove. Transfer into a serving bowl! Your stir fry is ready…
