Ingredients:
Barley – 1 cup
Water – 3 cups
Peppers – Cleaned and diced – 2 cups
Fresh Parsley – 1/3rd cup
Onion - diced
Lemon juice – 1tbsp
Extra virgin olive oil – 1tbsp
Garlic cloves – 3 crushed
Chili powder – 1/8th tsp
Salt – per taste
Preparation:
Barley contains a variety of vitamins, minerals, amino acids and fiber. It contains both soluble and insoluble fiber. It has antioxidant power and is good for your heart and to maintain healthy cholesterol levels. But Barley is not gluten-free! So, if you are on a gluten-free diet, this is not for you!
Soak barley for an hour. In a steel pan, bring the three cups of water to boil and add the barley and salt. When the barley is cooked and tender, transfer it into a serving bowl.
In a saucepan, put the oil and let it heat up a bit. Add the diced onion and let it sweat. At this time add the garlic and let it sit for a minute. Now put the peppers and sauté them. Add your chili powder and salt to taste and put this mixture over the cooked barley. Garnish with fresh parsley and add the lemon juice. Stir the salad and serve it! You could enjoy this with a bowl of tomato soup.
