Ingredients:
Kale and Quinoa Salad |
- organic quinoa (cook it with double the amount of water)
- kale (chopped) (couple of handfulls)
- shredded carrot (couple of handfulls)
- celery (one stick)
- sun-dried tomatoes (one handfull)
- red onion (a couple of thin slices - chopped up)
- raisins (I soaked them in hot water to get them soft) (one handful)
- pumpkin seeds (a few handfulls)
- balsamic vinegar (to taste)
- sesame seeds (a couple of handfuls)
- cucumber - 1 small
- pepper (green/red/yellow). (I used one red pepper)
- apple cider vinegar (to taste)
- water (about 1/2 cup)
- olive oil (to taste)
- tahini (to taste)
- sesame oil (I didn't have any, and it still tastes good)
- nutritional yeast (a couple of teaspoons at a time, to taste)
- turmeric (a couple of teaspoons at a time, to taste)
- ground cumin (a couple of teaspoons at a time, to taste)
- salt - pinch
- black pepper - pinch
