Christmas Cranberry Sauce

Christmas Cranberry Sauce
1 tbsp extra virgin olive oil or coconut oil
½ cup chopped onion
Xylitol, Stevia of sweetener of your choice to taste
½ cup water
¼ cup organic sulfur-free red wine
¼ teaspoon ground ginger
12 ounces/350 g fresh cranberries
2 teaspoons grated orange rind
1 tbsp fresh cilantro (optional)
1 cup of diced apple (optional)
¼ fairly chopped walnuts (optional)

Heat oil in a medium saucepan over medium-high heat. Add onion, and sauté for 4 minutes. Add sweetener and the next 4 ingredients (through cranberries); bring to a boil. Reduce heat, and simmer for 8 minutes or until cranberries pop. Remove from heat, and stir in orange rind. Serve chilled or at room temperature.
