GFCF Banana Bread

Ingredients:
Gluten Free All Purpose Flour - 1.75 cups
Bananas - 3
Large Organic eggs - 2 or Egg Whites - 4 or egg-substitute equivalent to two eggs
Olive oil or oil of your choice - 1/3rd cup
Brown Sugar - 3/4th cup or equivalent stevia
Vanilla Extract - 1 tsp
Baking Powder - 2 tsp
Xanthan Gum - 1tsp
Cinnamon Powder - 2 tsp
Organic raisins - 1/2 cup
Crushed Walnuts and Pecans - 1/2 cup

Preparation:

  1. Preheat oven to 350F.
  2. Mix all the dry ingredients (Flour, xanthan gum, baking powder, salt, cinnamon powder, raisins and crushed walnuts and pecans) and set aside.
  3. Blend all the other ingredients in a power mixer and transfer to the dry ingredient mixture.
  4. Mix all the ingredients well with an electric mixer.
  5. Transfer the above mixture into a greased baking tray and bake at 350F for 40-45 minutes.
  6. Enjoy!
