Gluten Free All Purpose Flour - 1.75 cups
Bananas - 3
Large Organic eggs - 2 or Egg Whites - 4 or egg-substitute equivalent to two eggs
Olive oil or oil of your choice - 1/3rd cup
Brown Sugar - 3/4th cup or equivalent stevia
Vanilla Extract - 1 tsp
Baking Powder - 2 tsp
Xanthan Gum - 1tsp
Cinnamon Powder - 2 tsp
Organic raisins - 1/2 cup
Crushed Walnuts and Pecans - 1/2 cup
- Preheat oven to 350F.
- Mix all the dry ingredients (Flour, xanthan gum, baking powder, salt, cinnamon powder, raisins and crushed walnuts and pecans) and set aside.
- Blend all the other ingredients in a power mixer and transfer to the dry ingredient mixture.
- Mix all the ingredients well with an electric mixer.
- Transfer the above mixture into a greased baking tray and bake at 350F for 40-45 minutes.
