Arugula Salad (Vegan)

Arugula is rich in many vitamins and minerals. It belongs to cruciferous vegetables and has cancer fighting agents called glucosinolates. It has antioxidants, carotene and chlorophyll. Combined with other vegetables this makes a great salad!

Ingredients:
Argula, Carrots, Beets, Leeks, Olives, Cucumbers, Red Peppers, Capers, Broccoli, Tomatoes, any fruit (I used Mandarin), Pistachios (use any nuts you have) and mix in a tablespoon or two of your homemade vinaigrette. Enjoy!
