Teasel Gourd Stir Fry

Ingredients:
Teasel Gourds – 1 pound
Diced Carrots – 1 cup
Large Onion Diced – 1 cup
Tomatoes – 2 diced
Garlic Cloves – 5 (minced)
Cayenne Pepper – a few pinches
Salt (preferably Himalayan) – per your taste
Extra Virgin Olive Oil – 1 tbsp

Preparation:
Teasel gourds are baby bitter gourds (as I call them). They are very tasty and cute to look at! They are packed with a variety of nutrients. They are rich in vitamins B and C and minerals like potassium, manganese, magnesium, phosphorus and folate. They are also rich in fiber, beta-carotene and is a highly recommended vegetable for those with diabetes due to the presence of a phytonutrient called charantin.

Heat up the oil in a wok. Fry the onions for a minute and then add the quartered teasel gourds. Fry these for another four minutes. Then add the carrots and let the ingredients cook for a minute or two. Add the diced tomatoes and give them a stir. Finally, add the minced garlic, salt and pepper and stir the ingredients well for a minute.
