Ingredients:
Chopped Green Beans – 4 cups
Onion – 1 diced
Green Chillies – 2 chopped finely
Mustard seeds – 1/4th tsp
Salt to taste
Cumin Powder – 1/4th tsp
Peanuts – 1/4th cup
Garlic cloves – 5
Curry Leaves – 10 diced
Carrots – 2 peeled
Olive oil – 2 tbsp
Preparation:
Slightly heat up olive oil in a pan and add mustard seeds. Allow them to splutter and then add onions and green chillies. Stir this for a minute. Then add in your chopped green beans along with salt and cumin powder. Mix well and set the flame on high and stir the beans every minute for about 6-8 minutes.
In a separate pan, roast the peanuts and when peanuts are nearly roasted add the garlic and curry leaves with some salt (if you like). Then put this in a food processor or chop it in a blender. Mix this to the stir fry and give it a stir. Finally, garnish with peeled carrots.
This makes the dish appealing to the eye and the children will enjoy it as well. Involve your children in your cooking. Give them little tasks like peeling carrots or some such playful activity.
