Ingredients:
Raw Mango peeled and diced – 1/4th cup
Diced Cucumber – ½ cup
Tomato – ½ diced
Cilantro – leaves of two sprigs
Salt – per your taste
Balsamic Vinegar – 1 tsp
Cayenne Pepper – 1 pinch
Ginger (1/2 inch) and Garlic (1 pod) – crushed
Lemon juice – few drops
Extra Virgin Olive Oil – 1 tsp
Preparation:

First prepare the salad dressing by mixing vinegar, olive oil, salt, pepper, lemon juice and crushed ginger & garlic. Set this aside.
In a small salad bowl mix diced mango, cucumber, tomato and cilantro with the salad dressing. Let this sit in the refrigerator for atleast one hour; this way all the flavors will blend and soak in well. Serve this cold on a hot summer day.
