Raw Mango Salad

Raw Mango peeled and diced – 1/4th cup
Diced Cucumber – ½ cup
Tomato – ½ diced
Cilantro – leaves of two sprigs
Salt – per your taste
Balsamic Vinegar – 1 tsp
Cayenne Pepper – 1 pinch
Ginger (1/2 inch) and Garlic (1 pod) – crushed
Lemon juice – few drops
Extra Virgin Olive Oil – 1 tsp

Raw mango is loaded with vitamin C. It has diuretic and laxative properties and is used to treat some gastro-intestinal disorders. There are various health benefits attached to this fruit both in the raw and ripe forms.

First prepare the salad dressing by mixing vinegar, olive oil, salt, pepper, lemon juice and crushed ginger & garlic. Set this aside.

In a small salad bowl mix diced mango, cucumber, tomato and cilantro with the salad dressing. Let this sit in the refrigerator for atleast one hour; this way all the flavors will blend and soak in well. Serve this cold on a hot summer day.
