Avocado Salad

Ingredients:
Avocados – 2
Tomato – 1
Onion – 1
Juice of a half-a-lemon
Sea Salt – as desired (less is better)
Cumin powder – a pinch or two
Extra-virgin Olive oil – 1 tsp
Few sprigs of fresh parsley

Preparation:
Buy fresh organic produce although it is expensive. If the avocados are hard allow them to ripen for two or three days. When the avocados are ripe they are soft to the touch. You can use a clean knife and cut across the vertical section and turn the two cut sections in the opposite direction. This would separate the two sections easily and with a teaspoon you can scoop out the seed. Cut the avocado into bite sizes. Cut the tomato and onion into little bits. Mix the three in a small salad bowl and squeeze the juice of half-lemon and sprinkle some sea salt and cumin. I usually garnish with fresh parsley for added flavor. Favorable for diabetics too!

Preparation Time: Less than half-hour

Serves: 2
